The flavor is strong, the way sesame oil is, but much less restricting. It's easy to use in a variety of ways, making it altogether more akin to olive oil - and the flavor doesn't overwhelm other items in cooked dishes. In sautes, the flavor is simple enough to be used in almost anything, adding great depth to greens, Asian-oriented dishes and caramelizing onions.
