Olive Oil and Balsamic Vinegar from Soler Romero
Our friends sent us some amazing olive oil and balsamic from their farm in Spain, and, though it's not quite local, the quality is unbeatable, and we couldn't help but share it with you. Their specialty is picual olive oil, which is super high in polyphenols, oleic acid and antioxidants. We think it's the perfect blend of that peppery, fruity and bitter taste you want your olive oil to be. If you have been interested in good extra virgin olive oils for a while, perhaps you selected the variety arbequina when you first went into the world of quality oils. Arbequina oils are mild fruity oils with no peppery and no bitterness, it is a good start for beginners... but a good picual is the next step.
The balsamic ingredients are: wine vinegar and concentrated grape must. The grape juice is cooked until caramelized, and then mixed with the wine vinegar. The final result is a dense, dark, shiny vinegar with a body and a complex flavor, sweet and bitter at the same time. The Soler Romero balsamic vinegar is peculiar for the grape varieties used as Pedro Ximenez and Malbec, and for its aging in oak barrels for 5 years before its packaging. The ingredients are 100% natural and organic, no caramel or syrup is added, the natural sweetness comes from the grapes used and the heated grape juice.
