We wanted burgers. We were trying to avoid meat. We had, for whatever reason, an infinite supply of canned black beans. We had found a recipe earlier, but then left our phone downstairs…

Black Bean Burgers
Servings: 4
Ingredients
- black beans
- onion
- garlic
- salt and pepper
- eggs
- bread crumbs
Instructions
- Open can of black beans. Drain most of the liquid.
- Add a bag of bread crumbs and crushed pretzels (we had them, they were stale), about 1/2 cup total
- Mince half an onion, maybe 5 or 6 cloves of garlic.
- Shave off some corn, if you’ve got some. Chop up a pepper, if you feel like it.
- Add two eggs.
- Mix everything together.
- If you feel like it, add a chopped jalapeno, some ground flax and brewer’s yeast to thicken.
Notes
Let’s talk substitutions here – you can use any bean. You can use any veg that doesn’t take forever to cook. Gluten free? Not sure I’d recommend a gluten free flour, but any bread-ish form made into crumbs will do the trick. Oats will work too! Highly recommend some form of onion in there, but hey, to each their own. You could also just add a ton of spices from Spicemode or LeMaster Family Kitchen and you’d forget onions ever existed. Or, just add some McCluskey Cheddar and beet ketchup from Bushel and Pecks.
