Mushroom. Bacon.

Apparently, everything good in life has spoken: mushroom bacon is real. Mushroom bacon is made by by roast or saute, and the secret ingredient is liquid smoke. No liquid smoke? Use any smoky spice you’ve got lying around for a tasty alternative. Any thinly sliced veggie will do for this exercise! You might just give up the pig!
We get our mushrooms from our pals at River Valley Ranch. They’ve been around the local food scene since you couldn’t even get fresh mushrooms in Chicagoland and continue to be some of the best mushroom farmers we’ve ever met. We’re lucky to get them fresh each week!

Mushroom Bacon

Ingredients

  • mushrooms (sliced)
  • oil
  • soy sauce
  • honey
  • liquid smoke (or spices)

Instructions

  • For every half pound of sliced criminis, add about 1 and a half tablespoons of oil and soy sauce, respectively, and about a half to a full tablespoon of maple syrup, honey or maple sugar, and just a pinch of the liquid smoke – a half teaspoon or a quick dash will do it.
  • Mix and bake, or saute, for 20 minutes or so on parchment paper, or fry for about 5-10 minutes.

Notes

Not into weird food chemicals? No sweat, opt for some smoked paprika, chipotle powder, or even a toasted tea.
