Easy meals for when you’re just over it

Sometimes you’re just literally over it and by “it” we mean the kitchen and all thing. This is how we manage that but still stay nourished.


FROZEN PIZZA W/ FARM FRESH VEG

Why stress when you can just throw a pizza in the oven with a few slices of onions and know you got your fruits, veg, proteins and carbs in? Need to be gourmet? Add a fresh grate of cheese, some salami slices, any other sliced veg you like (pre-sauteed or roasted if it will take a second to cook) and serve with a spinach salad, or just throw some sorrel leaves on at the end. We ate this 3 times in the last 10 days or so, and that’s okay, because so long as the ingredients are decent, there’s nothing wrong with a bit of ‘za.

BREAKFAST FOR DINNER

All kids love breakfast for dinner and we’re not sure why we tend to forget as adults that breakfast for dinner is one of the easiest things you can do for yourself. Whether you’re opting for a quick and easy savory oatmeal, chocolate-chip pancakes (don’t forget the buttermilk), a simple set of eggs and bacon, or making eggs in a basket for all, we think you should just give yourself a pat on the back for cooking in the first place.

LOADED POTATOES/TAMALES

It’s easy, it’s whatever flavors you desire, it’s a loaded carb. We like our potatoes or tamales with copious amounts of butter or olive oil, a big dollop or two of sour cream or yogurt, grated cheese, some salami or bacon bits, chopped raw onion, and a bit of salsa. Easier to just cut a salami. All it takes is cooking a potato and chopping.


JUST ADD TOASTS/ CHEESE & PUT LEFTOVER BITS TOGETHER

No need to be extra about stuff when you just really need to eat. This is a great way to do it. Basically, just add toast and cheese slices to any dish - soups, salads, leftovers - and you’ve got a full meal on lock. You will feel European and you will be because this is a rather common way to put a meal together. Charcuterie is dinner!

MUFFIN TIN EGG BITES

All you might really need in life are these one bowl, freezable muffin tin egg bites. We throw them in a tortilla with some greens for an easy meal. Use any ingredients you like with your eggs.

CROCK POT CHICKEN SALSA

One of our OG Tomato Mountaineers introduced us to this recipe - simply throw a thing of our habanero salsa, some chicken breasts and a chopped potato or two in your crockpot, and cook on low all day. And then you’re set. That’s it. Any kind of salsa will do. So will your favorite sauce and broth.
