Roasted Sweet Potato Fries

Oh my gosh, these roasted bites of deliciousness never last long enough to make it to our dinner plates. We have designated sweet potato fries the anytime snack and do our very best to practice all the patience we know such that we do not burn our tongues by eating them before they’ve properly cooled.

These sweet potatoes from Fifth Season were some of the best sweet potatoes we’ve had in a while. They were huge, too! Some of them were about half the size of our heads. We made a strict moratorium on adding any sweeter to them when we cooked with them, because they were so gosh darn sweet!

Roasted Sweet Potato Fries

A quick and easy, simple and nourishing, actually mouth-watering snack. Spiced or plain, everyone will be asking for seconds! Serve as is or with a yogurt, ranch, ketchup or bbq sauce. For whatever reason, this seems to satisfy our craving for chicken wings, and we like to put some sliced carrots and celery on the side, too.

Ingredients

  • sweet potatoes
  • oil
  • salt and pepper

Instructions

  • Cut, cover with coconut oil or an oil of your choosing.
  • Add salt and spice, sugar if you’re really wanting dessert, but unnecessary otherwise as the sweet potatoes are just so good and so sweet on their own.
  • Roast at 420, roast at 350, doesn’t really matter, just take it out when they’re soft and it smells good in the kitchen and the smell wafts into the house (or check it after 20 minutes and every ten minutes after that).
