Trending or no longer trending, we’re over the moon for savory oatmeal. Haven’t tried it? Hear us out. Rice takes a while to make, facts. Oats are super great for you, facts. Can you eat grits sweet or savory? Yes. Same with oats. Get. On. Our. Level. Lol. It’s kind of like congee, or, porridge. We know it sounds like rocket science, but it’s really just that you add spice instead of sugar.

You know what we’re gonna say: that butter from Nordic for this one and the rolled oats from Brian Severson are really going to take this recipe to the next level.

Ingredients

  • rolled oats
  • vegetables
  • broth or water
  • spices
  • salt or soy
  • butter or oil

Instructions

  • How do you like your veggies cooked? We like to start with some minced onions, sauteed, add some garlic, and then throw in some water or broth – about 2 cups of water per 1 cup of veg and a 1/2 cup of rolled oats, fresh or dried mushrooms, and any chopped veggies we’ve been wanting to eat!
  • Cook on medium-low heat until all the veggies are soft, and add your oats.
  • Cook until it’s a porridge-like substance.

Notes

You can also simply make some oats, add salt and spices and a bit of butter oil, and top with your favorite sauteed or freshly chopped veggies. Add an egg! Shave some daikon and carrots for a garnish! It’s delightful with all types of seasonings. Add some oven-roasted shallots for extra oomf.
