“I look forward to our weekly CSA boxes because it helps keep me from sliding into a same-old-same-old meal rut. I often have to learn to make something delicious with something new. This time of year it’s many varieties of root vegetables. I would *never* have picked out a giant celery root, but when they arrived in this week’s box, well, challenge accepted! So far from this box I’ve been busy roasting. Roasted celery root tossed with a just a splash of ACV, a sprinkle of salt, pepper, fresh thyme (also from the farm store) and toasted pecans. The other dish is a salad made almost entirely from the box or farm store: leaf lettuce topped with roasted beets, parsnips, and carrots, tossed in Saffi EVOO and Bushel & Peck’s chive blossom vinegar. Topped with a bit of feta, cracked black pepper, toasted pecans, and sunflower sprouts.”
