Whole hen soup

Feeling a little under the weather? This homemade one pot chicken soup has legs. Nothing like a homemade broth to help your body focus on healing itself. Sometimes when we feel unwell, we’re reminded that the food we’re eating is either helping or hurting us! This one is certainly helping.

you can defrost this lil guy or you can literally just put it into the pot from frozen

INGREDIENTS

whole chicken

filtered water

onion

couple carrots

some celery or parsnips

garlic, ginger to your liking

bit of oil or lard

salt, pepper, spices

INSTRUCTIONS

  1. Chop and sweat your onions, add spices, garlic or ginger. Add the other veggies and let those cook a second, then put your chicken in the pot. Add enough water to cover the chicken.

  2. Bring to a boil, then cover and let simmer all day. It’s ready when the meat just falls off the bone. Salt and pepper after it’s been cooking a while. To make things easy you can take the bird out, get the bones, and then put the meat back in.

NOTES

The key is that there is no need to fuss over this recipe, because you can basically just boil a chicken and drink the water and add salt and some spices and it will be pretty darn good. Don’t have carrots? Use some parsnips, sweet potato, or squash. Don’t have celery? Parsnips or celery root are perfect. Don’t have a chicken? Use some turkey legs. Don’t have turkey legs? Use a meat with bones. Don’t have meat with bones? Add tons of roots. Want an extra punch of flavor? Add miso. There’s no shortage of stuff you can add.

Pro tips:

  • keep any grains you want to add separate from the broth and add them per serving

  • sneak some spinach into the bottom of the bowl by simply ripping up a few leaves and pouring the broth over them when you’re ready to get your soup on

  • all about those toppings - eggs, noodles, sprouts, gochujang, bonito flakes, potato chips…

  • add lemon, lime, or hot sauce for extra zest before serving

  • freezes super well, keeps about a week in the fridge

  • this also works in a slow cooker if you can’t be bothered to mind the stove!
